What if I could give you a breakfast recipe that was as delicious as it is nourishing, simple to make yet makes enough to feed and please a group, and customizable with your choice of a fruit topping or syrup?
This recipe was created by my beautiful youngest daughter, Kyrsten and she and her husband make it weekly for their family to enjoy! I love her recipe so much that every time she’s made it for us, I’ve told her that she’d have to share the recipe so all of our TWN friends could know her version of baked pancake love. Here in the Western U.P., we have a very strong Finnish population and their breakfast won our hearts quickly. It’s called Pannukakku. But don’t worry, you don’t have to say it. You just get to eat it.
Similar to a dutch baby or a popover, this custard-like pancake is rich in flavor with a hint of warm spices and gently sweetened with maple syrup and comes together in minutes in your blender or food processor.
To begin, choose your baking dish. Kyrsten uses a 9×13″ baking dish, but I wanted fewer, thicker pieces so mine was made in an 8×11″ dish and baked it about 10-15 extra minutes. You could certainly use a deep cast iron skillet if you’d like as well. These instructions will be based on using a 9×13.
To your baking dish, add 6 T. of unsalted butter and place it in the oven while you preheat the oven to 350 degrees. Let it remain there while you combine the following ingredients in a blender or food processor:
Let this mix well until thoroughly combined and smooth. Pour the mixture into the hot butter in the hot dish. Sprinkle lightly with cinnamon sugar and bake for 40 minutes or so or until the center is bubbly, but set. The pancake will puff up while baking and then settle beautifully. Serve warm with fresh fruit, jam, or syrup.
