A custardy baked Finnish pancake breakfast that can be customized with your favorite fruit or syrup, this simple and delicious breakfast feeds a crowd!

  • 6 T. unsalted butter
  • 1 c. flour
  • ½ c. maple syrup
  • 2 tsp. cinnamon
  • ⅛ tsp. nutmeg
  • ⅛ tsp. cardamom
  • 4 eggs
  • 2 c. milk
  • 1 T. vanilla
  • Toppings: Fruit, syrup, or jam
Here's how...
  1. To your baking dish, add 6 T. of unsalted butter and place it in the oven while you preheat the oven to 350 degrees. Let it remain there while you combine the remaining ingredients in a blender or food processor.
  2. Let this mix well until thoroughly combined and smooth.
  3. Pour the mixture into the hot butter in the hot dish.
  4. Sprinkle lightly with cinnamon sugar and bake for 40 minutes or so or until the center is bubbly, but set. The pancake will puff up while baking and then settle beautifully.
  5. Serve warm with fresh fruit, jam, or syrup.
