So, The Perfect Chocolate Chip Cookie isn’t cutting it for you anymore, huh?  You’ve made it too many times, and now you need something with a little more flair?  Okay, I’m your girl.  I’m about to knock your socks off.

These are ramped up, revved up, just really fabulous cookies that haven’t failed me yet.  I’ve made these f.o.r.e.v.e.r. and have had folks just about beg me for the recipe.  My girls used to make these for bake sales and to sell at yard sales and more then a few times, folks drove back to get more or to sell their youngest child for the recipe.  Okay, so that last part was a bit of an exaggeration, but I’m telling you, these are really, really good cookies.

Whip ’em up in just a few minutes and you’ll see what I mean.  But, if you love these like I promise you will, you need to at least give me credit for them.  Share this recipe on Pinterest or Facebook, or at least give someone the name of my website.  It’s a fair trade; it really is.  🙂  And these cookies deserve the attention.

Cream together:

1/2 c. (1 stick) of butter

1/2 c. peanut butter

1/2 c. sugar

1/3 c. brown sugar

Add in 1 egg

and 1/2 tsp. vanilla.

In a separate bowl, mix together:

1 c. flour

1 tsp. baking soda

1/4 tsp. salt

1/2 c. oats

Mix the dry with the wet ingredients and then stir in 1 c. semisweet chocolate chips — milk chocolate are also another great option.

Place in rounded Tablespoon size balls on a cookie sheet and bake in a preheated 350 degree oven for 8-10 minutes.  Do not over bake.  The second you see a little golden on top (they should look a bit underdone in the middle), take them out, let them cool for 2-3 minutes and then carefully move them to a cooling rack.

Now this is very, very important.  Eat them warm.  You will thank me.  When the peanut butter flavor backs up the goozing chocolate chips that pretty much drips down your chin, you will say, “That Alison is one smart girl!”

  • ½ c. butter
  • ½ c. peanut butter
  • ½ c. sugar
  • ⅓ c. brown sugar
  • 1 egg
  • ½ tsp. vanilla
  • 1 c. flour
  • ½ c. oats
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • 1 c. semisweet chocolate chips
Here's how...
  1. Cream together the butter, peanut butter, and sugars.
  2. Add in the egg and vanilla.
  3. In a separate bowl mix the flour, baking soda, salt, and oats.
  4. Mix the dry and wet ingredients together and when fully combined, stir in the chocolate chips.
  5. Place in rounded Tablespoon sized balls onto a cookie sheet and bake in a preheated 350 degree oven for 8-10 minutes JUST until you you see a little golden on top and they still look underdone in the middle. Remove the cookies from the oven and let them cool on the cookie sheet for 2-3 minutes and then carefully move them to a wire rack to cool.
