I know. You don’t think that a cheap little cut of dark meat will make you happy. I echoed those sentiments myself not too long ago. These are cheap, they’re tender, flavorful and easy. I just have to say it once: Winner, winner…chicken dinner. And would you believe you can cook them in less than 30 minutes using only the broiler in your oven!? So fantastic! Since this recipe is adjustable to the number of people you are serving, it makes it easy for a weeknight or to serve to guests — I just plan 2 thighs per person.
And here are your easy, peasy instructions! In a large bowl, mix the following spices:
2 tsp. garlic powder
2 tsp. chili powder
1 tsp. salt
1 tsp. cumin
1 tsp. paprika
1/2 cayenne pepper (adjust to taste).
And then add in up to 8 bone-in chicken thighs and toss them around in the spices until coated.
Preheat your broiler on high.
I used my cast iron skillet to make these, but a broiler pan or large jelly-roll pan would work as well. I lightly greased the skillet with coconut oil and then spread the chicken thighs out as much as possible to make one layer.
Broil them for 10 minutes on each side about 6-8 inches from the heat source.
While they are broiling, mix 6 T. honey and 2 tsp. apple cider vinegar in a small bowl. After the ten minutes per side, brush half of the honey mixture over the chicken and broil another minute.
Flip the chicken pieces and brush with the remaining honey mixture, and broil one more minute or until the chicken reads 170-175 on a meat thermometer. Take them out and let them rest for about five minutes before serving.
That’s it! So easy!!!! So fast! So delicious. I served them with roasted summer veggies and Change Your Life Potatoes (something had to be cheesy and bacon-y in this meal).
Try it. See if I’m right.
Please note: you can also make these with boneless chicken thighs and reduce the cook time to five minutes per side with the 2 additional minutes for the glaze.

Tried this one for the first time tonight. I’ll say I was a little nervous with the vinegar in the honey because of my strong distaste, pun intended, for vinegar. It was not present in the profile like I thought it would be and the chicken had a mild sweetness that was great. I will also say that I have never even used my broiler. These were so yummy and easy. and cooked in a snap. I left out the cayenne pepper because of the spice wimpiness in my house. Will definitely add these to the meal list and am going to make a little jar with this spice mix in it to make it even quicker! Thanks!
