I’m not exaggerating about it being the best. This is the kind of ham that spiral hams only wish they could be. It’s super cheap, full of flavor, requires two ingredients and there will be leftovers for other meals. It’s another Kirksey family favorite. I’ve always made bone-in hams because I use the bone later for soups. I learned the pineapple trick in this one from a chef in Frankfort, MI this last summer. I only had to promise him my first-born to have him tell me his secret, but it might have been worth it. Haha. Well, he won’t get my firstborn, but my firstborn sure loves the ham!

 You need an ugly ham. I’m sorry. It’s really ugly–has skin on it, and a stubby end where the leg was. It’s called a ham shank and you are looking for one with a stubby shank (not too elongated) protruding from it. It’s generally about $1.50 a pound and cheaper on sale. There. Now that you are suitably disgusted, go buy an ugly ham and a big ol’ can of crushed pineapple. Unwrap the ugly fella and put it on/in a big enough pan to hold it and all the juices that will result from cooking it. Dump the can of crushed pineapple over the top.

Seal the whole thing well in aluminum foil and put it in the oven for about 6 hours on 275 degrees.  The key to the goodness is low and slow so don’t cut corners on the cooking time.

You can also cut this into pieces to fit into your crock pot and cook it on low for 6-8 hours for the same delicious results.

I love to serve it with Change Your Life Potatoes and some form of homemade bread like these gorgeous Pumpkin Crescent Rolls. Reserve some of the juice to pour over individual servings.

Save the bone and some of the meat for Bean Soup or Ham and Potato Casserole. But, good luck saving it if you have carnivores at your house like I do. They’re gonna love it!

  • 1 large can crushed pineapple
Here's how...
  1. Place the ham shank in a large roasting pan and cover it with the can of pineapple. Seal well and bake in a preheated 275 degree oven for about 6 hours. Or cut it into pieces small enough to fit into a crock pot and cook on low for 6-8 hours.

    I’m super excited to try this recipe. I ran to the grocery store to buy my ugly ham shank and they are all precooked/smoked. There aren’t any uncooked ham shanks. . . Do you use precooked or uncooked?

      Hi, Tara! I hope I’m getting back to you in time! :o) My understanding and experience says that ham shanks are all smoked/precooked. That’s the way you want it. You’re just changing the flavor and texture. I’m so glad you’re making this!!! I was going to add a new recipe soon — took pics already — using the leftovers from this. You can make little ham/pineapple sliders on Hawaiian bread! Sauté pineapple and onion in a couple tablespoons of butter. Pile the bottom half of the rolls with a layer of ham, some cheddar cheese, and then the onion and pineapple. Bake for 15 minutes at 325 or so or until melty and voila!! You’ll have sliders to die for!! Happy ham day to you all! :o)
