This might be the easiest delicious soup you’ll ever make!

Filled with sausage, kale, and orzo pasta, this savory soup has a punch of flavor and heartiness in a quick and simple soup that can be ready in under half an hour.

Unlike several of my other soups, this one does not need to simmer all day so you can whip this stuff up in minutes and have it ready in under a half an hour total, easily.  And it’s so savory and rich and just plain good.  When we first tried it, we made it again within days just because we couldn’t get enough.  It’s just one of those soups that hits the spot.  And it’s something unique which we love because we eat a lot of soup at our house.

Sausage Orzo Soup -- Filled with sausage, kale, and orzo pasta, this savory soup has a punch of flavor and heartiness in a quick and simple soup that can be ready in under a half an hour. | thatwhichnourishes.com

Begin by chopping the following:

1 c. celery (include some of the leaves for extra nutrition),

1 c. onion,

and 6 cloves of garlic.

In a large soup pot, drizzle a couple Tablespoons of olive oil and heat over medium heat.  Add the celery, onion and garlic and sauté for several minutes until soft and translucent.

Add in one pound of ground sausage and brown until no longer pink.

Add in 2 cups of orzo pasta and let brown for 2-3 minutes before adding in the following:

4 c. (30-32 oz.) tomatoes or tomato juice (depending on the texture you’d like in your finished product),

6 cups chicken broth or stock (I use home-canned bone broth for extra nutrition),

2 T. Italian seasoning,

2 tsp. salt,

1 tsp. pepper,

and 1/2-1 tsp. crushed red pepper if desired.

Bring to a boil and then reduce to a simmer for 15 minutes or so until the pasta is cooked.  Add in 1 bunch of washed, chopped kale and let it wilt for just a few minutes.

Season to taste.

Note that if you prepare this soup too far in advance, the pasta will soak up the liquid and you will have a VERY thick soup.  This also happens to the leftovers, which we happen to love, but you can always add more broth to thin it back out a bit.

This recipe is easy to cut in half for smaller groups.

  • 2 cups orzo pasta
  • 4 c. (30-32 oz.) tomatoes or tomato juice (depending on the texture you'd like in your finished product),
  • 6 cups chicken broth or stock
  • 2 T. Italian seasoning
  • 2 tsp. salt
  • 1 tsp. pepper
  • ½-1 tsp. crushed red pepper (optional)
  • 1 bunch washed and chopped kale

  6. Add in 1 bunch of washed, chopped kale and let it wilt for just a few minutes.
  7. Season to taste.
