There are certain folks in my house who were pretty sure they hated meatloaf. That is, until this meatloaf changed our lives. Haha. Okay, that’s a bit dramatic, but I will say this is hands-down the best meatloaf I’ve ever had, and sure makes this family happy. It has kind of a secret ingredient that makes it unique, and makes us pretty happy.
The pictures could never do it justice so you’ll just have to make it and see what you think!
1 small onion (or if you happen to not have any fresh onions 1 Tbsp. of minced onion will do),
Now, add 1 1/2 lbs. lean ground beef and mush it all together in one goopy mess with your hands just like you’re in preschool…
Put it in a good-sized loaf pan. Spread 1/2 c. of brown sugar on top, and
Bake at 350 degrees for about an hour or until the meat is no longer pink.

Kids came home from school and, as usual, the first words are something about “What’s for dinner?” When I told Morgan it was meatloaf, she said “I hate meatloaf”. Well, this one changed her mind. None of us would put meatloaf on our top 10 (especially when there are things like Chimi’s and Chicken and Dumplings on our list), but this one is really tasty and plates were clean. I added some italian sausage to our meat mixture as I usually do per request from my husband. I have one of those meatloaf double loaf pans with the holes in the bottom of the inner pan so I put the brown sugar/ketchup mixture on the top and put it all on a sheet tray to bake. Yummy, thank you!
And, once again, this meatloaf works it magic and brings a hater to the meatloaf-lovin’ side. ;o)

I use everything but the cheese crackers in my meatloaf too! My family loves the brown sugar ketchup mix. I mix it in the meatloaf and then pour it on top right before it’s ready too. And the meatloaf sandwiches the next day are wonderful!
