My favorite location on this planet to date is Kauai. And in that magical land of heavenly beaches is a magical food called Huli Huli Chicken. I wish I could transport you there to taste it, but because I can’t, I created a Huli Huli Chicken Salad that takes me back to the flavors of the island. Savory Spice sent me their Huli Chicken Spice blend to use to develop a new recipe and this is what I made with it!
With notes of teriyaki and ginger in the spice blend plus the addition of pineapple and almonds, this added a new spin to chicken salad that will spice up your chicken salad game!
I’m always up for a chicken salad recipe and just in time for summer, this one will give you a meal or an appetizer to share that is guaranteed to be unique and new! If you buy from their website through my links, you also support TWN so it’s a win-win-win.
You can serve this with crackers as an appetizer or lunch or you can certainly pile it on some soft brioche or Hawaiian rolls or croissants for a lovely meal for a baby or bridal shower or picnic on the beach! Don’t forget to try it like Savory Spice recommends for a sticky, sweet sauce on chicken thighs by adding honey and soy sauce!
Here’s how easy my recipe is!
Begin with 2 cups of cooked and shredded chicken. Obviously, a rotisserie is easiest, but I typically throw chicken thighs that I keep in the freezer that are seasoned with salt and pepper into my instant pot with a cup of water for 12 minutes (1 lb.) or 15 mins for 2+ lbs. and then shred the meat with my mixer. Use white or dark meat or a mix of both based on your preference.
To the chicken add the following:
1/3 c. mayonnaise (I use avocado oil based mayo when possible)
2-3 Tablespoons of Huli Huli Chicken seasoning (season to taste after letting the flavors sit for at least an hour)
1/3 c. pineapple tidbits
1/4 c. slivered almonds
Dash of soy sauce
Refrigerate for at least an hour, and let the flavors settle in to the chicken and if needed add more Huli Seasoning to taste. Garnish with fresh chives or freshly ground pepper if desired.
That’s it! You now have a delicious lunch made in minutes thanks to Savory Spice and yours truly. 🧡
