If you’re looking for the perfect, fresh thing to bring to a get-together for Easter or Mother’s Day or pretty much any event, I’ve got your veggies with a wow factor! Peppers or cherry tomatoes stuffed with the perfect herbed cream cheese mixture are given green onion stems and transformed into a beautiful bouquet!
My sweet man and I felt like we were doing a craft project when we made these beauties!
A super delicious craft project!
I used mini bell peppers, but you can totally use pretty little cherry tomatoes of any color you’d like! Just scrape out the insides and seeds with a small knife or spoon of either the peppers or tomatoes, and stuff them with about a Tablespoon or so of this super easy herbed cream cheese mixture that I use in several of my favorite dishes including my Bacon Wrapped Stuffed Chicken Breasts and my Veggie Pizza Squares — both of which would be so beautiful to make and enjoy at any of your Spring feasts as well! For a little added yum, I added a couple Tablespoons of softened butter for my tulips, but otherwise it’s the same recipe.
The amounts are going to vary so be willing to be a bit flexible. I used most of one bag of mini bell peppers with this amount of cream cheese, but it’s going to depend on size and how much you stuff and which vegetable you use. Also, it’s not sad to have leftover cream cheese! Make just a couple stuffed chicken breasts and win tonight’s dinner game!
Wash the green onions and peel off that slimy layer over the white end. Then put the green end into the end of each pepper and lay it gently onto your tray. Any extra green parts just add to the bouquet so don’t remove them. Tie with a bit of twine or even one of the green pieces of green onion if you’d like!
