If you are a fan of the song Baby Beluga, or even if you aren’t it will probably be stuck in your head now that you’ve read my title. I’m kinda sorry for that. Well, not really. It’s only fair since it’s in mine as well. :o)
This easy and delicious recipe makes 10 or so baby burritos or you could use 5 big flour shells if you choose. I do that often as well. Either way, this is a super easy meal using just six little ingredients that are easy to keep on hand in your pantry.
This meal also freezes very nicely. I freeze the burritos in a covered foil pan before baking and thaw in the fridge at least 24 hours ahead and bake as usual.
I pair this with Sweet Corn Muffins which will be the next recipe I post. Otherwise, chips and salsa or Real-deal Refried Beans are a great accompaniment.
Begin by browning 1 pound of ground beef. Once it’s drained, add taco or burrito seasoning and water just like you would for tacos (either homemade or a packet).
Open a can of refried beans. You can definitely use homemade refried beans for this, too. If I have them on hand, this is definitely my favorite way to make burritos.
Shred up 8 oz. of sharp cheddar cheese . Of course, you can use Monterey Jack or Mexican cheese or whatever else floats your boat. I just like the tang of cheddar for these guys.
On a small flour tortilla, spread a tablespoon or so of beans, 2-3 tablespoons-ish of seasoned beef, and a sprinkle of cheese. Though it’s tempting to fill them with more, if you do, you won’t be able to close them so use caution.
Roll it up starting with the right and left sides, trying to keep as much goodness inside as you can, and then place them in a 9×13 (or equivalent size) pan.
When you have them all in the pan, drizzle enough taco sauce to cover them. I use Ortega taco sauce. It’s just perfect for this recipe. You don’t want to drown them in it or it will be way too strong. Just pour some on the top and use the back of a spoon to evenly coat them. Try to get some on the ends so they don’t dry out.
Sprinkle with the remaining cheese.
If you are serving them soon, they only need to bake for 15 minutes at 350. If you need them later, you can just pop them in the fridge and bake them later, but give them closer to a half an hour to warm through.
